The Nutrition Masterclass teaches the carnivore and metabolic approach we both use and teach every day, built from first principles rather than headlines. You will learn how to read the science for yourself, what food actually is at a molecular level, how the body uses it, where modern food causes harm, and how to apply all of it in practice, whether that is for your own health or for your clients.

Monday 7 to Saturday 12 December 2026. Five teaching days, with a rest day on the Thursday so the first half settles before the final two. A working farm in the Kent countryside. Around 30 places.

What you will cover, day by day.

Day one, foundations. How nutrition science actually works, including confounding variables, blinding, and why epidemiology and randomised trials answer different questions. What macronutrients actually are at a molecular level. How the body makes ATP, or adenosine triphosphate, and what mitochondria do. Digestion and absorption. The evolutionary evidence on where humans sit in the food chain. Weston Price on dental and facial development. The carnivore approach, its principles and how it is applied day to day.

Day two, micronutrients and how modern food harms us. Nutrient density and bioavailability, including heme and non-heme iron. Whether dietary carbohydrate is actually required, and how the body makes the glucose it needs. Vitamin C. Vitamin A, retinol against beta-carotene. Cholesterol as the raw material for vitamin D and the fat-soluble vitamins, and where vitamin K2 really comes from. Minerals and electrolytes. Reading the blood markers that change clinical decisions, including CRP, fasting insulin, iron studies and the lipoproteins that carry cholesterol. Grains, lectins and intestinal permeability. Glyphosate and the shikimate pathway.

Day three, fuel selection and ketosis. Fibre, thyroid function and the gut microbiome. Glucose against fructose. Seed oils, linoleic acid and cardiolipin. Insulin, and physiological insulin resistance as a normal adaptation rather than a disease. The Randle cycle and metabolic flexibility. Body composition from a hormonal perspective, and what calories are and are not. Ketosis, how to get into it, and exogenous ketones. Ketone measurement and adaptation. Fasting and eating-window strategies.

Day four, protein, training, ageing and redox. Therapeutic ketosis, and where it is and is not appropriate. Protein requirements for different goals. mTOR, or mechanistic target of rapamycin, and the growth against longevity trade-off. Muscle, strength, and the anaerobic against aerobic myth. NAD, or nicotinamide adenine dinucleotide, and cellular ageing. Glycation, meaning the Amadori and Maillard reactions, and how to limit it. Oxidative stress and Nrf2, and why many so-called antioxidants work by triggering your own response rather than by donating electrons. Water and deuterium.

Day five, medicine myths and clinical practice. What actually drives atherosclerosis, with statins and metformin examined. Histamine responses and how to support them. Autoimmunity and the dietary lever. The metabolic angle on cancer, and where nutrition fits and where it does not. Sleep. Practical shopping, sourcing and meal preparation, for yourself and for clients. Client coaching and behaviour change. Putting the whole thing together.

Every teaching day closes with a 45 minute open question and answer session. On three of the days you also meet people who reversed conditions they were told were irreversible, and athletes who broke through their limits, and you can question them directly.

All daytime food is included, and it is the food the course teaches. Accommodation, evening meals and travel are not included.
